Coffee to Water Ratio

The single most useful lever after grind. Measure coffee to water by weight, start from the golden ratio, and adjust strength to taste - by method, with a simple reference table.

The widely cited "golden ratio" for filter coffee is roughly 1:15 to 1:18 — about 55–65 grams of coffee per litre of water — and a reliable place to start is around 1:16, which is about 30g of coffee to 480g of water. After grind size, the ratio of coffee to water is the single most useful lever you have. It sets how strong the cup is, and it is the one variable you can copy exactly from one morning to the next — but only if you measure it.

The key idea is to think in coffee to water by weight, not scoops and mugs. A "scoop" of coffee changes weight with the grind and the bean, and a "cup" on a carafe is rarely a real cup, so measuring by volume quietly moves your ratio around every day. Weighing both the dry coffee and the water in grams gives you one honest number you can repeat and adjust on purpose. That is also why grind and ratio work together: the ratio decides how much coffee meets how much water, and the grind decides how fast the water can pull flavour out of it. Change one and you often need to nudge the other.

Below is the golden ratio broken down by brew method, because the number is expressed differently depending on how you brew. Filter, pour over and French press share the same rough range. Espresso is written as a brew ratio of the dry dose to the liquid yield. Cold brew is made much stronger as a concentrate and then diluted. Get the ratio in the right ballpark for your method, weigh it, and you have removed most of the guesswork from a good cup.

Ratios by weight, not scoops

A coffee-to-water ratio is simply how many grams of water you use for each gram of dry coffee. Written 1:16, it means one part coffee to sixteen parts water — so 30g of coffee needs about 480g of water (30 × 16). Because roughly one gram of water equals one millilitre, you can pour water by weight on the same scale you used for the beans, which is far more accurate than reading a jug. This is the whole reason a scale matters: you cannot repeat what you do not measure. If yesterday's cup was perfect and you have no idea how much coffee and water went into it, you are back to guessing today. A simple kitchen scale that reads to 1g is enough for filter coffee; a good espresso scale that reads to 0.1g earns its place once you are pulling shots.

Two habits make ratios foolproof. First, weigh the coffee first, then tare (zero) the scale, then pour the water onto ituntil you hit your target weight. Second, keep the ratio fixed while you change grind, and keep the grind fixed while you change the ratio — change one thing at a time so the cup tells you honestly what each move did. Scale everything the same way for a bigger or smaller batch: for a 1:16 ratio, just multiply your coffee weight by sixteen to find the water. Filter, pour over and French press

For drip, pour over and other filter methods, the golden ratio lands in the 1:15 to 1:18 band, which is about 55 to 65 grams of coffee per litre of water. A safe, crowd-pleasing starting point is 1:16: for a single large mug, that is roughly 21g of coffee to about 340g of water; for a small pot, 30g of coffee to about 480g of water. Stronger drinkers drift toward 1:15, lighter drinkers toward 1:17 or 1:18. French press works in the same neighbourhood, around 1:15 (roughly 65g of coffee per litre), because the coffee steeps fully submerged rather than passing through quickly. Some people go slightly stronger still. Whatever the method, the most important thing is to pick a ratio, weigh it, and only then judge the cup — because if the brew tastes off, you want to know whether it was the ratio or the grind, and you can only tell that if the ratio was fixed and measured.

Espresso: dose and yield (brew ratio)

Espresso uses the same core idea but expresses it differently. Instead of coffee-to-water, espresso is described as a brew ratio of dose to yield— the dry coffee weight in the basket (the dose) to the weight of liquid espresso in the cup (the yield). A common target is about 1:2: roughly 18g in to about 36g out. A shorter, more intense ratio around 1:1.5 is a ristretto; a longer, gentler one around 1:2.5 is a lungo. Note this is expressed as dose to liquid out, not to the total water pushed through, so the numbers look very different from the 1:16 you use for filter — but it is the same principle of a fixed coffee weight against a target extracted weight.

Because espresso happens fast and under pressure, grind and ratio are especially tightly linked here: the grind controls whether you can even hit that 1:2 yield in a sensible time. Cold brew: concentrate ratios

Cold brew breaks the golden-ratio pattern on purpose. Because it steeps for many hours in cold water, it is usually made as a concentrate at roughly 1:5 to 1:8 (far more coffee per unit of water than a hot brew), then diluted to tastewith water, milk or ice before drinking. A common approach is to brew at about 1:8, taste the concentrate, and cut it roughly one-to-one with water or milk in the glass — which lands the finished drink back in a normal strength range. Two things to remember: cold brew uses a coarse grind, and the ratio you brew at is not the ratio you drink at, so always taste after dilution rather than judging the raw concentrate.

How to dial strength to taste

Here is the mistake almost everyone makes: when a cup tastes weak, they let it brew longer or run more water through the same grounds. That does not make it stronger— it makes it more extracted, which usually just adds bitterness. Strength is set by the ratio: to make a cup stronger, use more coffee for the same water (move from 1:16 toward 1:15), not a longer brew. To make it lighter, use less coffee (move toward 1:17 or 1:18). Keep the grind and brew time steady while you do this so you are only changing one thing.
