How to Make a Cappuccino at Home
A cappuccino is espresso, steamed milk and a thick layer of foam in rough balance — drier and airier than a latte. Here is the shot, the foamier steaming, the pour, and the fixes when it goes wrong.

A cappuccino is the airiest of the everyday milk drinks: a shot of espresso, a smaller pour of steamed milk, and a generous crown of foam, in rough balance. The traditional description is equal thirds — a third espresso, a third steamed milk, a third foam — and while modern cafes vary that, the idea holds: a cappuccino drinks stronger and lighter than a latte because there is less milk diluting the coffee and much more foam on top. If you can already make a good latte, a cappuccino is the same three moves with one deliberate change: you steam the milk drier and airier, and you use less of it. The single idea to hold onto is that the foam is the whole point of a cappuccino. A latte is a milk drink with a thin foam cap; a cappuccino flips the emphasis toward a thick, stable, spoonable-but-still-silky foam layer that insulates the drink and gives it that light, cloud-like feel. So where latte technique is all about keeping the foam minimal and glossy, cappuccino technique is about deliberately building moreair into the milk — without letting it turn into stiff, dry, dish-soap bubbles. Getting that balance is the skill, and it is entirely learnable at home.
You do not need a commercial machine, but you do need a way to add real air to milk. A home machine with a decent steam wand is ideal, and honestly a cappuccino is a slightly more forgiving drink to steam than a latte because you are allowedmore foam — a bit extra air is on-style rather than a mistake. The cappuccino, defined (the ratio)
The classic cappuccino is built on the rule of thirds: roughly equal parts espresso, steamed milk and foam, served in a smaller cup than a latte — usually 5 to 6 ounces. Start from a double shot(about 18–20g in, roughly twice that out), add a modest pour of steamed milk, and top it with a thick layer of foam. Because there is far less milk than in a latte, the espresso stays firmly in charge; because there is much more foam, the drink feels light and airy on the lip. That balance is exactly what separates it from its neighbours:
- Cappuccino— small cup, double shot, less milk, a thick foam crown. Strong and airy.

- Flat white — small like a cappuccino but wetter: more liquid milk, only a whisper of very fine foam, so it drinks smooth and coffee-forward rather than airy.

Step 1: pull a double shot
A cappuccino is a strong drink, so it wants a proper base. Pull a double shot — roughly 18–20g of coffee in, about twice that weight of liquid out, in the 25–30 second range — straight into your cappuccino cup. Because the drink is small and coffee-forward, the shot really matters here: a weak or under-extracted shot will taste thin even under all that foam. Step 2: steam the milk (stiffer, airier foam)
This is where a cappuccino diverges from a latte. You still want microfoam — bubbles too small to see, giving a glossy, paint-like texture — but you build more of it. The technique is the same two phases, just weighted toward air:
- Stretch (add air): with the steam wand tip just under the surface, let it pull air into the milk with a gentle hissing or paper-tearing sound. For a cappuccino you hold this phase a little longerthan for a latte — a few seconds rather than one or two — because you want a thicker foam layer. You should see the milk volume grow noticeably.
- Texture (fold it in):then sink the tip slightly deeper and angle the pitcher so the milk spins in a smooth whirlpool. This folds the extra air in and breaks big bubbles down into fine microfoam. Do not skip this — it is what keeps the thicker foam silky instead of stiff and crackly.
Stop when the pitcher is just too hot to hold comfortably against your palm — around 60–65°C / 140–150°F. Overheating scorches the milk and collapses the foam, and that is the most common cappuccino mistake. Step 3: the pour
Before pouring, reintegrate the milk: swirl the pitcher and give it a light tap on the counter so the foam and liquid become one glossy texture again. For a traditional cappuccino you then pour a little differently than a latte:
Pour the liquid milk in first from a slight height into the centre of the shot to build the base, keeping the foam held back in the pitcher with the swirl. Then, as the cup fills, bring the spout closer and let the thick foam spoon or pour out on top to form the dome. Classic cappuccinos are often finished simply — a clean white cap, or a dusting of cocoa — rather than intricate latte art, because the foam is deliberately thicker and harder to draw fine patterns with. A well-made cappuccino should have a foam layer you can rest a light dusting of chocolate on without it sinking. What milk works best, and the no-wand route
Whole dairy milkis the easiest and most forgiving for a cappuccino — its fat and protein build a stable, sweet, velvety foam that holds its shape. Lower-fat milk foams up bigger and faster but the foam is drier and less sweet, and collapses sooner. Among plant milks, a barista-formulated oat milk is the standout; barista soy also textures well. Standard (non-barista) plant milks tend to stay watery or split. Whatever you use, start it cold.
If your machine has an automatic frother or no wand,a cappuccino is actually a friendlier target than a latte, because those tools tend to produce plenty of foam — which is exactly what a cappuccino wants. Common mistakes
- Not enough foam (it drinks like a latte). You did not spend long enough in the stretch phase. Fix: keep the wand tip near the surface a few seconds longer to add more air before you sink it to texture, and use a smaller pour of milk.
- Foam too stiff and dry. You added air but never folded it in. Dry, crackly foam sits in ugly bubbles and will not pour. Fix: after stretching, sink the tip and spin a proper whirlpool to break the bubbles down, then swirl and tap the pitcher before pouring.
- Milk too hot.Scorched milk tastes flat and cooked and the foam collapses. Fix: stop when the pitcher is just too hot to hold (about 60–65°C / 140–150°F), and never re-steam milk.
- Weak, watery shot.In a small, coffee-forward drink a poor shot has nowhere to hide. Fix: pull a proper double and dial it in first — if it tastes sour or bitter, adjust the grind and ratio before blaming the milk.
