What Is Pre-Infusion?

Before the pump ramps to full pressure, many espresso machines wet the coffee gently at low pressure for a few seconds. That short, quiet phase — pre-infusion — saturates the puck evenly and can head off the channelling that ruins a shot.

Pre-infusion is a short, gentle wetting phaseat the start of an espresso shot, before the machine ramps up to full extraction pressure. Instead of hitting a dry, packed puck with the full force of the pump — around nine bars — the machine first pushes water through at low pressure, typically somewhere in the one-to-three barrange, for a few seconds. That low- pressure water soaks into the coffee and saturates it evenly from top to bottom. Only once the puck is wetted does the pressure climb to the full — roughly nine bar — extraction. It is a small, quiet moment at the front of the shot that many people never notice, but it is one of the most effective ways to make espresso more consistent, because it changes how the puck is prepared to receive that high pressure.

The reason it helps comes down to what goes wrong when full pressure meets a dry puck. Nine bars is a lot of force, and a dry coffee bed does not have uniform resistance — there are always slightly looser and slightly denser spots. Hit that dry bed with full pressure all at once and the water rushes through the path of least resistance, carving open channels that let it gush through some areas while barely touching others. That is channelling, and it produces shots that are simultaneously over- and under-extracted — sour and bitter at the same time. Pre-infusion pre-empts it: the low-pressure water fills the voids, the grounds swell and settle into a more even bed, and fine particles that would otherwise migrate and clog get a chance to lock in place. By the time full pressure arrives, the puck presents a uniform wall of resistance, so the water flows evenly instead of finding a shortcut. It is, in effect, a mechanical assist for good puck prep.

Pre-infusion is not a single feature that a machine either has or lacks — it is a behaviour that different machines produce in very different ways, from a barista pausing a manual lever, to a programmed low-pressure ramp on an electronic machine, to a group that simply uses household water-line pressure to wet the puck. It is also not magic: it makes the biggest difference on lighter roasts and finicky pucks, and it cannot rescue a badly prepared basket or a poor grind. Below we explain exactly what happens during the phase, the main ways machines deliver it, and the honest answer to when it is worth caring about versus when it is a spec-sheet line that will not change your morning cup.

What actually happens during pre-infusion

Picture the puck at the moment the shot starts. It is dry, tamped and packed into the basket, and its resistance is almostuniform — but never perfectly. During pre-infusion, low-pressure water (roughly one to three bar) enters from above and soaks down through the bed. Three useful things happen:

  • The grounds swell. Dry coffee absorbs water and expands, and as it swells it fills the small voids in the bed and settles into a more even, more tightly knit puck.
  • Fines lock in place. The tiny particles that cause most channelling become sticky when wet and adhere where they are, rather than being blasted downward to clog the basket unevenly.
  • Pressure equalises. With the voids filled and the bed saturated, the puck presents a uniform resistance, so when full pressure arrives it pushes evenly across the whole surface instead of finding a weak spot to exploit.

The phase is short — commonly in the region of three to ten seconds, depending on the machine and settings — and often followed on higher-end machines by a brief pause (a "bloom") before the pump ramps up. The payoff is a slower, steadier start to the shot and, when it works, a more even extraction with less of the jetting and spraying that signals channelling.

How different machines do it

The same wetting effect is produced by very different mechanisms, and knowing which one your machine uses tells you how much control you have:

  • Manual lever machines.On a spring-lever or direct-lever machine, the barista controls pre-infusion by hand. Raising the lever admits water to the group and lets it wet the puck at low pressure for as long as you choose before you engage the spring (or push) that drives full pressure. It is the most hands-on, most adjustable form of pre-infusion — and the most dependent on the operator.
  • Breville and other electronic machines.Many popular home machines, including Breville's Barista range, apply an automatic low-pressure pre-infusion: the machine deliberately runs the pump gently (or holds pressure low) for the first seconds of the shot before ramping to full pressure. On some models the duration is fixed; on others it is programmable. This is the most common way home users get pre-infusion without thinking about it — several of our best machines for beginners include it.
  • Line-pressure (and E61) groups.Some machines wet the puck using the pressure of the incoming water supply — typically around the low-bar range from a plumbed line — before the main pump engages. Classic E61 groups and machines with a pre-infusion chamber achieve a similar soft start mechanically, using a small chamber or valve that lets pressure build gradually rather than slamming to full pressure instantly.

A pump machine with no pre-infusion at all simply jumps to full pressure from the first second. That is not a fault — plenty of excellent shots are pulled that way — but it does put more of the burden on your puck prep and grind to get an even bed before the pressure hits.

When pre-infusion actually helps

Pre-infusion is most useful in the situations where channelling is most likely:

  • Lighter roasts and fine grinds.Light-roasted coffee is dense and hard to extract, so it is ground very fine and packed tight — exactly the conditions where full pressure on a dry puck carves channels. A gentle wetting phase evens things out and improves extraction noticeably.
  • Higher doses and tight baskets. A full, tightly packed basket has less headroom and higher resistance, so a soft start helps the bed settle before the pump leans on it.
  • Imperfect puck prep.If your distribution and tamping are not flawless (whose are?), pre-infusion is forgiving — it buys the bed a moment to equalise and covers small unevenness that would otherwise become a channel.

Where it matters leastis with darker, more soluble roasts on a coarser grind and a well-prepared puck — those extract easily and channel less, so the difference may be subtle. And it is worth saying plainly: pre-infusion is an assist, not a cure. It cannot fix a grind that is wildly off, a badly distributed basket, or a pressurised basket that is already masking your prep. Good fundamentals come first; pre-infusion makes good fundamentals more consistent.

Do you need it? (buying honesty)

Pre-infusion is a genuinely useful feature, but it should sit fairly low on a buying checklist. A machine that pre-infuses but has a weak, inconsistent pump or an underpowered steam wand is a worse buy than one with no pre-infusion but strong fundamentals. Far more important to your cup are a good grinder and solid puck prep— those determine whether the puck is even in the first place, and pre-infusion only refines an already-decent bed. If two machines are otherwise comparable and one offers programmable pre-infusion, it is a real plus, especially if you plan to brew lighter roasts. Faking pre-infusion on a machine without it

If your pump machine jumps straight to full pressure, you can approximate a soft start on some models by briefly starting the shot, stopping it for a second or two to let the puck soak, then restarting — a manual "pre-infusion pause." It is crude and not possible on every machine, but on some it noticeably calms an unruly shot. The more reliable route to the same benefit, though, is upstream: dial the grind in properly, distribute and tamp evenly, and consider a channelling fix like a distribution tool or WDT. Those address the same root cause — an uneven puck — that pre-infusion is trying to compensate for.

Do I really need pre-infusion?
It is a useful feature but not a must-have. It helps most with lighter roasts, fine grinds, high doses and imperfect puck prep — the situations where channelling is most likely. It matters less with darker, easily extracted roasts and a well-prepared basket. More importantly, it is an assist rather than a cure: a good grinder and even puck prep matter far more to your cup, and a machine with strong fundamentals but no pre-infusion beats one that pre-infuses but is weak elsewhere.
